VATHAKOLAMBU, BISI BELE BATH , SAAGU RECIPE:

Vathakolambu:
Ingredients:
Tamarind 1 egg size,Oil 3 tbsp,Onions 2,Red chillies 2,Tuvar dhal 1 1/2 tbsp,Jaggery 1 tbsp,Methi seeds 1/2 tsp,Salt 3/4 tsp,Rice powder 1 tsp,Chilli powder 1 tsp ,Mustard seeds 1/2 tsp,Curry leaves few,Hing pinch,Turmeric 1/4 tsp
Directions: Soak tamarind in 2 1/2 cups of water, squeeze and strain out juic.Heat oil in a pan and add mustard seeds, broken red chillies, tuvar dal, methi seeds, curry leaves and hing powder. When mustard seeds splutters, add chopped onions- fry till golden in color. Add chilli powder, turmeric powder and fry well. Add tamarind water, jaggery and salt. Simmer till raw smell of jaggery disappears. Mix rice powder in 1/4 cup of water, add to the simmering tamarind gravy. Let the vathakolambu become thick.Serve at room temperature.
BISI BELE BATH POWDER

INGREDIENTS:

Coriander Seeds - 1 cup ,Red Chillies - 4 cups ,Chana Dal - 1/4 cup ,Methi Seeds - 1 tsp
Cloves - 2 pcs ,Cinnamon - 2 medium pcs ,Poppy Seeds - 2 tsps ,Dry coconut - as per taste ,Elaichi - 2 pcs ,Marathi Moggu - 2 pcs Hing(asafoetida) - 1 small marble size(if it is solid) or 1/4 tsp(if powder)

METHOD

1. Roast cinnamon, marati moggu, cloves and cardamom in ghee. Roast the rest of them separately with some oil
2. Grind them together to a soft powder and store it in a air tight jar.
BISI BELE BATH
INGREDIENTS:

Beans - 8-10 no:s ,Potato - 1 no: Carrot - 1 no: Peas - 1/4 cup Capsicum - 1 no: Groundnuts - 1-2 tsps Cashewnuts - 8-10 no:s Tuvar Dal - 1 cup Rice - 1 cup Bisi bele bath powder - 2 tsps ,Coconut - 1 cup ,Tamarind - a small lemon size ,Butter - 1 tsp Mustard Seeds - 1 tsp ,Curry Leaves - 1 twig ,Hing - a pinch ,Turmeric powder - 1/4 tsp
Oil - 2 tbsps ,Salt - As per taste

METHOD

1. Wash and cut all the vegetables into small cubes. Keep them aside. Cook the rice and dal and let it cool.
2. Heat butter and oil in a large pan. Add mustard seeds and when they splutter add the cashewnuts, groundnuts and curry leaves.
3. Add all the vegetables and a cup of water. Cook till all the vegetables are soft. Add salt for the vegetables. Meanwhile soak the tamarind in hot water for about 15 mins and extract the juice. Add the juice to the cooked vegetables and boil till the raw smell goes.
4. Add the turmeric powder and hing. Grind together coconut and bisibele bath powder and add it the vegetables. Boil well, add the dal first and let it boil for a min and then add the rice. Add salt to your taste. Simmer and boil for about 15 mins. You can add some more water while it is boiling if it is very thick.
5. Finally, garnish with coriander and serve hot with cucumber or onion and tomato raita and chips.
Saagu Recipe
Ingredients: 2-3 cups cubed mixed vegetables (carrots, beans, peas, potatoes, capsicum)
1 onion, finely sliced, few curry leaves, 1/2 tsp mustard seeds, salt to taste,1/2 tbsp oil
coriander leaves for garnish
For the wet masala: 1 tbsp grated coconut, small piece ginger, 1 tbsp coriander leaves
3-4 green chillis
For the dry masala: 1 tbsp poppy seeds, 1 tbsp coriander seeds, 1″ cinnamon stick, 2 cloves, 1 1/2 tbsps roasted channa dal
1 Heat oil in a vessel, add the mustard seeds and let them splutter. Add the onions and curry leaves and saute till transparent.
2 Add the mixed vegetables and combine well. Add salt and turmeric pwd and cook on medium heat for 3-4 mts. Add one-fourth cup of water and pressure cook till half cooked. While its pressure cooking, prepare the wet masala.
3 Once is half-cooked, add the ground masala paste and combine and let it cook for 1-2 mts. Add a cup of water and bring to a boil. Reduce flame and add the ground masala powder and cook further for another 4-5 mts or it forms a thick gravy consistency. Garnish with fresh coriander leaves.
4 Serve hot with dosas, rotis or puris.
